Happy Halloween!!
In honor of this day’s celebrations- this week’s meal plan consists entirely of CANDY.
Chocolate at breakfast – a little caffeine will do ya good.
Gummy bears, worms, spiders, and the sour variety at lunch. Those are fruit flavored, so they count as healthy and well balanced.
Caramel Apple pops for dinner.
Even though some of you will definitely have enough candy to feed your family for (over) a week, I won’t leave you hanging. BUT FIRST..

We may or may not have repurposed their
flower girl dresses, but I can assure you,
it totally works.

Breakfast Quesadillas
Serves 2
4 corn & wheat blend tortillas
4 whole eggs
3/4 cup shredded cheese
cooking spray

Whisk together 2 whole eggs with 2 egg whites. Coat a medium skillet with cooking spray and scramble eggs until firm. Remove from the skillet. Add one tortilla to the warmed skillet. Sprinkle with cheese and top with 1/2 of your eggs. Cover with second tortilla. Continue to cook for 1-2 minutes, pressing down to help melt the cheese. Flip and toast the other side until golden. Cut into wedges. Repeat with remaining tortillas, cheese, and eggs.
Ginger Chicken w Brown Rice
Serves 4
1 tablespoons lower-sodium soy sauce
1 tablespoon grated fresh ginger
1 clove garlic, smashed into paste
1/8 teaspoon black pepper
1 pound chicken breast, cooked and shredded
Cooking Spray
1 (9oz) pkg brown rice (such as Uncle Ben’s)
4 green onions, sliced
1 1/2 tablespoons toasted sesame seeds
2 teaspoons dark sesame oil

Combine soy sauce, ginger, garlic, black pepper, stirring with a whisk to blend well. Add it to the shredded chicken. Prepare rice according to package directions. Stir in chicken, green onions, sesame oil, and seeds. (I stirred the Basil Slaw into the chicken and rice)
They are so stinkin' cute!! I can't wait to see what they will be dressed up as!

Oh my GOSH!! I'm sure it's hard to imagine them when they were this little. They cute little noses…I die!
