Weeknight Dinner Prep – BBQ Meatloaf {Freezable}

Some weeks I really have it together for weeknight dinner prep and I try to include the kids to prep dinner. At least the girls. They love to help in the kitchen and BBQ Meatloaf is such an easy meal for us to do together. The girls are more likely to eat what is on their plate when they help make it – and that encourages the boys to eat.

All the kids love this BBQ Meatloaf and it’s a meal quick and easy-to-make the nights that Jordan is at the Firestation. Sometimes I’ll double the recipe and freeze the second one so I can have a quick meal to just reheat. I’ll take the extra out of the freezer nights the girls have volleyball.

There are a few substitutions you can make to fit your need listed below the recipe.

BBQ Meatloaf

  • 2 pounds lean (96%) ground beef
  • 1 medium chopped onion
  • 2 eggs*
  • 1 (8oz) can tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 1/2 sleeves crushed saltine crackers**

Preheat oven to 350 degrees. Spray a 11X7 glass dish with cooking spray.

In a medium bowl mix together all ingredients, one at a time, until incorporated. Pour mixture into the prepared glass dish and form into a loaf.

Place in the oven and bake for 45 minutes. Pull meatloaf out and pour BBQ sauce over top. Return loaf to the oven and heat through until sauce is bubbly, about 15 minutes. Remove from oven and allow the meatloaf to rest for 5 minutes before cutting to serve.

BBQ Sauce

  • 1 cup ketchup
  • 3/4 cup brown sugar
  • 2 teaspoons yellow mustard
  • 3 tablespoons Worcestershire sauce

In a small bowl combine all ingredients, stirring quickly until brown sugar is dissolved.

*Replace eggs with additional crackers and milk or broth for dairy-free.

**Regular bread crumbs can be used, and I have also used high fiber cereal (that I ground in my food processor) instead of saltines crackers. For Gluten Free (GF) put rice cakes in the food processor and chop until it resembles the breadcrumb mixture.

To add some green to our plates, I add some peas or green beans as a side dish. My kids also really enjoy these Meatloaf Muffins.

I hear you can air fry meatloaf. We’ve never tried. I may try it the next time I make BBQ Meatloaf using directions I found from the Toasty Oven.
