I’ll be honest. Planning dinner every night can be exhausting. Then trying to think of 5 easy weeknight meals we will ALL eat, adds a whole other component to the mix. I came across a site by Carrie Elle – a local in Dallas. I had a complete AH-HA moment when I read how she meal plans.
If there are 4 weeks in the month, she plans week 1 and week 3 with the same 5 meals. And then weeks 2 and 4 with 5 different meals. So really, you are only meal planning for 2 weeks.
When I have downtime, I will search through Pinterest and pin recipes that will work for our entire family. Here are 5 easy and kid-friendly meals we plan to have this week!
We all love this one. Comfort food – check. Veggies – check. I can double the recipe and have it ready to go for week 3 – check.
Taco Tuesday! This recipe is so easy to change up as needed – it is really so versatile. I will add the fillings to make stuffed peppers. Other times I’ll make rice and let the kids make Burrito Bowls.
Do Ramen Noodles bring back childhood memories for you? This is recipe is great on its own without the noodles but the kids like when I add them. You can also swap out the beef for chicken or use tofu to make the meal vegetarian.
These are so easy! I will serve this with mashed potatoes or roasted potatoes and some variety of a veggie.
Nothing is better than a sandwich, wrap, or lettuce wrap. I can make this one before the kids get home from school and just take it out before dinner and let the girls make their own while I help the boys. Sometimes we do this on sandwich bread, a wrap, or it’s just as good as a lettuce wrap.
