Supper Club | Cinco de Mayo

If you have been following this blog for awhile, or happen to land over at Chocolate Broccoli (which hasn’t seen a pot or serving dish in several months..*sigh*) you know about Supper Club.
Over the nearly 4 years we’ve been doing this we’ve grown pretty close, and have almost never missed a month of getting together and breaking bread.
  
We’ve laughed, eaten yummy food, had babies, traveled – we spend a lot of time together, and I love each and every one of them.
Normally we don’t do much for ‘holidays’ such as these.. but when you are planning a ‘party’ and there is a possible theme involved, well, its that much easier to get too excited about it.  
When I say party.. I mean Supper Club.  Always a party with these sweet friends of ours.  
Our Cinco de Mayo celebration was on Sunday- we all grabbed a margarita (or a Mexican beer) and made a day of it.  Perfect excuse for ‘day-drinking’, right?

 The BEST Margarita

1 oz. tequila * 1/4 oz. Triple Sec * 1/2 oz. lime juice * 1/2 oz. orange juice * 1 oz margarita mix

I went the easy route and served up crock pot tacos, but dressed it up to ‘dinner-party’ worthy and made a fun taco bar for serving.

3-Ingredient Crock Pot Tacos 
6 chicken breasts, 1 packet taco seasoning, 1 regular jar {mild} salsa
LOW for 6-7 hours
 fresh jalapeños * sour cream * shredded cheese * sautéed peppers and onions * guacamole * pico de galo * mango salsa * salsa verde
 Appetizers {because there is ALWAYS appetizers}
Jalapeño Popper Dip (holy amazing- I doubled the recipe for 8 people, and we literally licked the bowl clean) 
Texas Caviar {all healthy food should taste this good.}
2 (10oz) cans {mild} RoTel, 1 (15 oz) can balck eyed peas, 1 (15oz) can field peas, 1 diced red bell pepper, 1 diced yellow bell pepper, 1 diced orange bell pepper, 1 small diced red onion, 2 diced jalapeños, 3 tablespoons fresh garlic, 1/4-1/2 cup chopped fresh cilantro, 1 (16oz) bottle zesty Italian dressing 
The longer it sits, the more amazing it tastes.  I doubled this recipe the night before and let it sit in the fridge until we were ready to serve!

 Sopapilla Cheesecake bars with a touch of drizzled honey for dessert.  
Did not disappoint.
 Of course we can’t forget about the littles!  While we enjoyed adult bevi’s and snacks before dinner, we pulled out the water table for the babes 
 Jolie Grace fought me to the death to get that bow off her head.  I suppose its a good problem to have.
 These kids are just 2 weeks apart!  Our due dates were within a day of each other, so Jacob’s momma, Diana, and I spent our entire pregnancies together.. announcing we were pregnant to our little group on the same day (not intentional)

Mrs. Juliette Renee. Jacqueline’s total mini- and what a doll baby she is!
Parker ADORES her.  I was so impresses with how sweet and gentle she was with Juliette, and now really eager for baby number 3 – don’t tell anyone that..

i always love love love getting together with these people.  We never have a dull time.  Now that our little group has grown from 8 to 13 it is getting more interesting.. and sitting together at a table isn’t so much that important any more.

Its about getting our families together.. and doing life.

  2. The food…the drink…YUM! What a fun day! And I love the mason jar idea! I got the colorful plastic margarita glasses instead and they were horrible. Barely held any liquid and feel apart all the time at the bottom. $15 lesson learned haha
